On two channels only (E! and Sky Sport 3) I have noticed that it will flick to black and white for 5 seconds, change back and do it again continually.
It only does it on these two channels as far as I know, which coincidentally are on 12608H.
I use a s-video cable from the scart output. In saying that, it did the same thing with RCA cable too, so it's not the cable, which i thought it could have been.
Any ideas?

Try unplugging the power to your cordless phone
I've never seen a good picture from a Sky decoder with S-VHS output. Shaper than composite, yes, but the colours (yellow is worst) tends to smear out of the side of menu's. Ask for a component box and put a good scart to compnent cable on it.
Nothing to do with the problem above however.

I havn't seen a great sky pix even on Component !!
Well that's true of course!
Have borrowed a mates sky component skybox for the week and it looks really undefined compared to FV Ultraplus decoder on component.

Could be waiting a while. I sold a dish to a Sky customer last night, who's Sky dish blew down over the weekend. Sky said it would take six weeks to fix, so I made a sale. Thanks Sky.
